Easy Whole30 Breakfast Sausages with Kale + Spinach

The only whole30 breakfast sausage recipe you'll need. Packed full of nourishing greens, easy to make, toddler approved + great for meal prep.

Ingredients:

  • 1 lb ground chicken or beef
  • 1 tbsp avocado oil for stovetop method only
  • 1 small handful of spinach finely chopped, approx 1/4 cup loosely packed
  • 1 medium leaf of kale stem removed, finely chopped, approx 1/4 cup
  • 1/2 tsp kosher salt
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp ground pepper

Instructions:
Stovetop Method

  1. Add everything but the avocado oil into a bowl + mix well.
  2. Using your hands, form the mixture into patties or logs + place onto a plate.
  3. Heat avocado oil in a cast iron pan or regular skillet over medium heat.
  4. Once oil is warm, place sausages into the pan. Cook on each side for approximately 5 minutes or until internal temperature reaches 165 degrees.
  5. Remove sausages from pan + place on a paper towel lined plate to drain any excess oil.
  6. Serve warm on their own or with ketchup.

Oven Method

  1. Preheat oven to 400 degrees.
  2. Add everything but the avocado oil into a bowl + mix well.
  3. Using your hands, form the mixture into patties or logs + place onto a parchment paper lined baking sheet.
  4. Place the baking sheet in the preheated oven + cook for 10 minutes or until internal temperature reaches 165 degrees.
  5. Optional: Place under the broiler for 1-2 minutes to brown/crisp up more.
  6. Remove to a paper towel lined plate to drain any excess oil/grease.
  7. Serve warm on their own or with ketchup.
